Makes 4 to 6 tacos
2 Fresh Pacific Red Snapper or other rockfish filets (about 6 to 8 ozs a filet)
6 corn tortillas
Olive oil
Salt
Pepper
Lettuce (cut into long strips)
Fish Taco Sauce (recipe follows)
1 Cold Beer (or more)
Fish Taco Sauce
1 T Mamma’s Best BBQ Sauce
2 T Mayonnaise
1 t lemon juice
Prep:
- Heat your grill to medium high
- Remove the skin, clean and debone the fish if not done by your fish monger. Lightly coat with olive oil, season with salt and pepper.
- In a small bowl mix together the mayonnaise, Mamma’s Best BBQ sauce and lemon, keep cold.
Cook: Place the fish on the pre heated grill, non skin side down. Cook about 2 minutes or until browning on sides. Using a spatula flip and then cook about 3 minutes more until fish flakes lightly but you can still see the oil between the flakes. Place on a plate and cover.
Warm the tortillas on the grill.
Assemble: Lay tortilla flat on the plate, add some fish, breaking it into large chunks with your fingers. Spoon some Mamma’s Best Fish Taco Sauce over the fish, add some lettuce, salt and pepper, add more Mamma’s Best BBQ sauce if you like.
Eat: Open the cold beer, eat the taco and enjoy.
