The real deal, Heirloom Tomato Bacon Lettuce and Tortilla Tacos (BLTT) with
Smokey Bibb's Inferno Spice.
1 Package Bacon
6 or so Corn Tortillas
1 Heirloom Tomato
1 Head Romaine Lettuce
Thousand Island Dressing
Smokey Bibbs Inferno Dry Rub (or some other spicy dry rub mix)
Ok..here we go:
Cook the bacon. I prefer to cook it on the BBQ over indirect heat. Warm the tortillas, slice the tomatoes, wash and hand cut some lettuce leaves. Wait for the bacon to finish cooking.
To serve. Now this is important so you can taste all the flavors.
Place a tortilla on the cutting board, then place 1/2 leaf of romaine lettuce on 1/2 side of the tortilla, top the lettuce with two tomato slices, then 3 bacon slices, sprinkle liberally with the spicy dry rub.
Top with a squeeze or two of thousand island dressing, fold over and eat.
