About Smokealicious and ChefDave
I had my first restaurant job at 12 years old and was hooked on the joy of cooking for people since then.
I was classically trained and completed my apprenticeship in New York City, cooking at a bistro in Greenwich Village, the James Beard House and catering parties on the upper East and West Sides.
The Smokealicious BBQ team was created to provide a BBQ outlet for my friends and I. Having always wanted to compete at BBQ contest, I figured it would have to wait until I retired and had time. But then FoodTV ran all those shows during summer and I had to enter a contest. Lucky for me there was one coming up in my home town and so I got some advice, rallied friends and family...and entered. We came in 5th in Brisket, got a ribbon and came in 8th overall and were but by the Competition BBQ bug.
The team has a regular set of friends the show up to every competition to cook and take a shot at getting a trophy. Plus, we always invite some extra friends, especially when we travel out of town, to cook with us and learn/teach a bit. Makes the whole thing fun and ensures that the 70 pounds of meat we cook is eaten and not carried home.

I'll be teaching a BBQ 'n Beer class and tasting with Ryan Chester from The Rub Company in Riverside at the Inland Empire Brewing Co. Saturday, March 13th. The class is from 10:00-1:00 and we will be serving some tasty appetizers after the class until about 3 in the tasting room. These classes are a great time especially if you like quality handcrafted beer and BBQ!

My wife and I made this for dinner last nice. She is usually in charge of the rice cooker having been taught by our good friend Doug (and the one who gave us the Japanese rice cooker) how to properly measure the liquid, which rice you rinse and which you don't, how to use smell to tell how far along the rice is etc. Me, I got to marinate the meat and make the beans. The beans were a hit (as was the rice) so I thought I would share them with you.
1 Can black beans (don't rinse them)
1 medium Bel…

Ok, I'll have to get the recipe written up for this, But lets just say the classic combo of rosemary and lemon from the spice rub went very well with the crusted pork chops stuffed with crab and shrimp.
